As one of those adult-types who work, Steph, I would say go with what Insecurities says and use being a moderator if it's appropriate in a job application or resume.

Likely the best place to put it would be under "Volunteer Experience." That's exactly what it is. And volunteering either as a beta or a mod is assisting people in bettering that all-important skill of writing.
